Salty Caramel Oatmeal Cookie Bars

This past weekend was kinda cool and rainy (a rare occurrence here in Phoenix). Along with the fall-like weather came the desire
to forego my usual summery recipes, i.e. salads, popsicles, and ice cream, and opt for something a little richer. These flaky
oatmeal cookie bars paired with gooey salted caramel fit the bill. 



Ingredients:
1 cup butter
1 cup brown sugar
1/2 cup sugar
1 egg
2 teaspoons vanilla
1 2/3 cup flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups rolled oats
Soft caramel candies

Directions:
Preheat the oven to 350 degrees. Cream the butter and sugar until light and fluffy. Add the egg and vanilla and beat until smooth.
Combine the flour, salt, cinnamon, and baking soda in a separate bowl and then combine with the butter mixture. After these are combined,
add the rolled oats. Spread half of the dough mixture on the bottom of a pan lined with parchment paper. Place one layer of caramel candies
(I use Trader Joe's Fleur de Sel Caramels) on top of the first layer of dough. Then cover with the remaining dough. Use a glass dipped in sugar
to help flatten out the dough and make even layers. Bake for 30-35 minutes or until golden brown.
